Recipe idea - Chicken casserole

I just thought it was worth sharing this recipe with you all as it proved popular with Luke over the weekend. Apologies to those who like exact measures, but I made it up so no weights and measures for this one!

Anyway, we had 2 chicken quarters and a bag of chicken wings left over in the freezer from when I dismembered 2 organic chickens a couple of weeks ago. Incidentally, am I imagining it or is it actually possible to buy 2 whole organic chickens for the virtually the same price as 4 organic chicken breasts?

So after defrosting all the bits I fried them off in a little olive oil to give them some colour and then removed them from the pan.

Whilst this was happening I chopped a couple of carrots, some celery,an onion and some apple and then softened them in the pan with the chicken juices and a little more oil.

I then de-glazed the pan with some cider, brought everything to a gentle simmer, put the chicken back in with the veg mixture. Stuck a lid on it and simmered for about 40 minutes or until the chicken joints were cooked through.

Next stage was to pull all the meat off the chicken bones and return it to the pan, add a little seasoning and cream.

We served it with a baked potato and broccoli.

Even if I say it myself, it was pretty tasty - good enough for us as well as Luke and we got a few cubes of leftovers frozen in the freezer trays (at the foot of this page) for Lukes meals during the week.
